2027 Wedding Bar Trends in Denver:
What Couples Will Be Pouring Next
By Michelle & Amber, RMC Bartenders · September 2026 · 9 min read

Planning a 2027 wedding? The bar is changing fast. Here are the trends our team is already seeing, and how to bring them to your celebration without blowing the budget.
Couples want a bar that feels as personal as the rest of the day. That means drinks with a story, zero-proof options that look as good as the cocktails, and a few moments guests will talk about on the drive home. We've run wedding bars in Colorado since 2011, and these are the shifts we're planning around for next season.
The biggest wedding bar trends for 2027 are zero-proof menus, show-stopping garnishes, interactive seltzer and margarita bars, signature drinks with local Colorado flavor, earlier and lighter celebrations, late-night mini espresso martinis and shared moments like champagne toasts poured at the table. Rocky Mountain Catering has run wedding bars across Denver and Colorado since 2011.

Zero-Proof Drinks
Get a Full Menu
Guests who don't drink now expect more than soda water, and couples are building their bars to match. A zero-proof drink should get the same fresh juice, the same rim and the same garnish as the cocktail next to it.
Forecast growth in global no-alcohol drink volumes from 2024 to 2029.

Mocktails with the same care as cocktails
The best zero-proof menus mirror the cocktail menu. Guests holding a mocktail should look like they're holding the signature drink, because in every way that matters, they are.
How we pour it
- Mocktail margaritas all day, with fresh-squeezed lime, muddled fruit and a Tajín or salt rim.
- A seltzer bar that works both ways. Guests order it hard with a pour from your BYOB bar, or zero-proof.
- A mocktail on the welcome tray, so the first drink at the door works for every guest.
- An Italian soda bar with flavored syrups, sparkling water and fresh fruit, zero-proof from the start.
Show-Stopping Drinks
Are Back
After years of minimal everything, bars are going bold. Couples want drinks that look finished, with color, texture and a garnish worth a close-up.
At our bars, that means the drink is part of the décor. Trays of raspberry and peach seltzers, a Thai chili pepper on a spicy margarita, dried citrus catching the light at golden hour.
Garnishes that get photographed
- Hibiscus flowers
- Dried citrus wheels and fresh citrus
- Fresh berries and fresh herbs
- Thai chili peppers and Tajín rims
Of consumers surveyed say they value heightened, memorable experiences.

Guests Want
To Be Part of It
Wedding forecasters keep pointing to interactive stations where guests watch drinks come together or help build their own. Guests stay at a bar like that longer, and it gives them something to talk about.
Build-your-own at the seltzer bar
Guests choose a flavor, blackberry-cucumber-lime, fresh-squeezed limeade, raspberry or peach, add simple syrup if they like it sweeter, and finish with the garnish of their choice.
Margarita and paloma bar favorites
- Classic margarita with fresh lime and a salted rim
- Spicy margarita with fresh jalapeño, a Tajín rim and a Thai chili pepper
- Watermelon basil margarita, bright pink for summer photos
- Mango or strawberry margarita for guests who like it fruity
- Classic paloma with fresh grapefruit and a splash of soda
- Mezcal paloma, smoky and citrusy, with a Tajín rim
- Spicy Aperol paloma, finished with a Thai chili pepper
Italian soda bars for guests of every age
Our Italian soda bar turns a drink into a mini project. A chalkboard walks guests through it: fill a glass with ice, add a flavored syrup, top it with sparkling water, then finish with fresh berries, peaches or a swirl of whipped cream. Kids love it, and so do the grown-ups.

An RMC Italian soda bar: sparkling water, flavored syrups, fresh blueberries, strawberries and peaches, and whipped cream.
A second station keeps the line moving
A specialty bar gives guests another place to order, so the main bar stays calm during the busiest stretch of cocktail hour.

Signature Drinks Tell Your Story,
With Local Flavor
"His and hers" drinks are giving way to cocktails named for a first date, a honeymoon or the family dog. Couples are also reaching for local flavors, a trend Bacardi's report calls out by name.
At one of our Larkspur weddings, the couple each picked a drink: a Lavender Citrus Twist with lavender lemonade and vodka, and a Woodsmen Whiskey with whiskey, ginger beer, lime and fresh mint. The bar also poured Dry Dock Apricot Blonde, a Colorado favorite.
Name it after something real
- The cocktail from your first date
- The margarita from your honeymoon
- A bourbon smash named after your dog
Shop local for your BYOB bar
Pick up Colorado spirits and beer, or choose from our mixologists' cocktail menu. List the drinks on a sign at the bar and guests will know their order before they reach the bartender.

Earlier,
Lighter Celebrations
Younger guests are drinking earlier and lighter. That points to more afternoon receptions and brunch-hour weddings, where a lighter bar menu fits the day.
Of younger U.S. drinkers say they're choosing earlier evenings.

What works on a daytime bar
- A seltzer bar, spiked or zero-proof
- Mocktail margaritas with fresh fruit
- Fresh-squeezed limeade on a warm Colorado afternoon

Late-Night
Mini Espresso Martinis
The espresso martini went from trend to expectation. For 2027, couples want a real late-night moment built around it.
We make the espresso and pass mini espresso martinis in our cute martini glasses when the dance floor peaks. They're a quick pick-me-up, so guests can grab one without leaving the party. Bite-size desserts from our scratch pastry kitchen follow right behind, small enough to eat without leaving the dance floor.
From our scratch pastry kitchen
- Espresso-dipped madeleines
- Petit cappuccino cheesecakes
- Salted caramel ganache bites
- Hazelnut macchiato cake pops

Real Moments,
Not Screens
Couples are planning shared moments that pull guests off their phones and into the room.

Why Your Caterer
Should Run Your Bar
Hiring a separate bar company often means paying for two teams working the same room. Each one brings its own staff, captain, setup crew and timeline, and someone has to keep them in sync. When your caterer runs the bar, one team does it all.
- One planning conversationYour RMC event designer or coordinator plans the menu, bar, glassware and timeline together, so the drinks match the food and nothing falls through the cracks.
- One timeline, one captainThe captain running your dinner also runs your bar. Toasts, courses and the late-night mini espresso martini round all happen on the same schedule.
- One service teamOur ServSafe certified, insured bartenders work alongside our servers. The servers passing hors d'oeuvres also pass welcome drinks, pour champagne before the toasts and pour wine with dinner. You're not paying for extra staff to cover jobs our servers already handle.
- One team coordinating deliveryYour food, bar setup, mixers and garnishes arrive with our crew, and we coordinate glassware and linen rentals, whether they come from our warehouse or a rental partner.
- One person to callYour RMC event designer or coordinator answers every question about the menu, the bar and the timeline.

Two Ways to Get
Your Alcohol There
We order it with Argonaut
We'll happily work with Argonaut Wine & Liquor to order your alcohol, make sure it's delivered, and arrange pickup of unopened bottles for return after the event.
You buy it yourself
Have it delivered to the venue at your access time. Either way, our team checks in the delivery against your order before the first guest arrives.
Returning bottles to Argonaut? Unopened bottles need labels and seals intact, and Argonaut charges a 10% restocking fee if you return more than 30% of your order.
What Each
Option Includes
Most couples start with a BYOB bar, then add a specialty bar or the late-night round.
| Option | What it includes | Best for | How it's priced |
|---|---|---|---|
| BYOB bar | You buy the alcohol. We bring bartenders, mixers and garnishes, set up and break down. | Couples who want store prices on every bottle | Mixer fee plus bartender fee, no markup on alcohol |
| Seltzer bar | Old-fashioned glass seltzer bottles, fresh flavors, simple syrup and garnishes, spiked or zero-proof | Mixed crowds and daytime receptions | Per guest |
| Margarita & paloma bar | Fresh-squeezed lime and grapefruit, muddled fruit, fresh herbs, Tajín and salt rims | Tequila fans and summer weddings | Per guest |
| Glassware & linens | Champagne flutes to martini glasses, plus linens, with delivery coordinated | Venues without their own glassware | Priced separately |
Specialty bars use fresh-squeezed juice and fresh fruit, so they're priced per guest.
Questions to Ask
About Your Wedding Bar
- Does my venue allow outside alcohol and outside bartenders?
- Who orders the alcohol, and who checks in the delivery?
- What's included in the mixer fee, and what's priced per guest?
- Are glassware and linens included or priced separately?
- Are the bartenders ServSafe certified and insured, including liquor liability?
- How do unopened bottles get returned after the event?
Questions
Couples Ask Us
Can we bring our own alcohol?
Yes, if your venue allows it. You buy the beer, wine and spirits, and we bring the bartenders, mixers and garnishes.
Can you order our alcohol for us?
Yes. We'll work with Argonaut Wine & Liquor to order your alcohol, get it delivered and arrange pickup of unopened bottles for return.
What if our venue runs its own bar?
Some venues hold their own liquor license or work with exclusive partners, and we respect that. Many of those venues run excellent bar programs, so ask about the alcohol policy before you book vendors or buy bottles.
Are your bartenders certified and insured?
Yes. Our bartenders are ServSafe certified and insured, and we carry liquor liability coverage, so we're ready to meet your venue's requirements in Colorado.
How are the seltzer and margarita bars priced?
Both are priced per guest. We squeeze the juice and muddle the fruit fresh for your event, so per-guest pricing keeps the cost clear before the first pour.
Do you rent glassware?
Yes. We offer glassware from champagne flutes to martini glasses, plus linens, priced separately. We coordinate delivery and pickup.

How Food & Florals Create Meaningful Holiday Gatherings

As the holiday season approaches, most of us instinctively imagine the same things: warm tables, shared meals, fresh greenery, candlelight, familiar aromas, and the joyful hum of conversation. But what makes holiday gatherings truly memorable often comes down to two powerful elements, seasonal food and thoughtful floral design.
Below, we explore how both can transform any celebration, from intimate dinners to large end-of-year events.
Seasonal Menus Tell a Story
During the holidays, food becomes more than a meal, it becomes part of the experience. Seasonal ingredients like winter herbs, roasted vegetables, rich glazes, and nostalgic desserts all add sensory depth to a gathering.
A well-crafted holiday menu:
- Creates comfort through familiar flavors
- Encourages connection (everyone has a favorite holiday dish!)
- Sets the tone: elegant plated dinner, cozy buffet, or festive cocktail party
Food helps shape the emotional atmosphere of the evening.
Florals Bring Warmth, Texture & Seasonal Character
Holiday florals are more than decoration, they’re a visual expression of the season. Arrangements filled with deep greens, berries, roses, winter branches, or candlelit accents can shift the mood instantly.
Floral design enhances holiday events by:
- Adding warmth and dimension to your tablescape
- Creating natural focal points for gathering spaces
- Bringing seasonal colors indoors
- Supporting the event’s theme, energy, and style
Think of florals as the backdrop that ties every detail together.
Why Thoughtful Planning Matters

Holiday gatherings can be busy, so planning early helps ensure a cohesive experience. This is one where the menu, florals, décor, and timing feel intentional rather than rushed.
A well-planned celebration allows hosts to:
- Create a welcoming environment
- Focus on their guests rather than logistics
- Tailor the atmosphere—elegant, cozy, modern, or classic
- Avoid the holiday rush when venues, rentals, and seasonal elements book quickly
Those small touches help create memories guests hold onto.
To complement the season’s beauty, Moss Denver offers a stunning backdrop where creativity thrives. Its versatile, modern interiors make it ideal for holiday gatherings that want to feel polished yet intimate.

How Smart Catering Starts with the Seasons

Colorado’s late summer and early fall offer some of the most stunning – and underrated – windows for hosting events. With golden light, cooler evenings, and produce at its peak, this in-between season is perfect for corporate gatherings, weddings, and private celebrations alike. After all, some of the best event menus start with what’s in season.
At Rocky Mountain Catering, we believe that fresh, locally inspired ingredients are the foundation of unforgettable food, and summer into fall is one of our favorite times to create. From July through September, our kitchen highlights the richness of Colorado’s harvest. A perfect example? Our Palisade Peach Chicken or Peach Chutney Colorado Beef Tenderloin with Olathe Sweet Corn Risotto–both bursting with late-summer flavor and only available for a limited time. Ask us about adding them to your event menu!
Here’s a few tips to make the most of this beautiful season:
Embrace the Season
Incorporate peak produce and natural beauty into your event. Think peaches, corn, squash, and late-summer herbs. Your menu, decor, and floral design can all take cues from what’s growing now.
Timing is Everything
Early evening events are ideal as the light softens and the air cools. Golden hour becomes a built-in backdrop for your photographer-and your guests. You may even want to consider adding cozy elements like warm passed hors d’ oeuvres or signature hot cocktails.
